Hometown Palace uses an exceptional Peking duck process involving a 24-hour dry cure, maltose sugar bath, Portuguese Madeira wine injection, and smoking in a wood-fired oven with date wood. The result is a crispy, golden-skinned duck that the reviewer found impressive and delicious.
