The hospitality and history of the establishments, particularly the 100-year-old building housing the liver and tripe stall, made this an unforgettable culinary experience.
What was great: Farm-fresh eggs cooked in oil with clean, buttery flavor, creamy and rich kimak (sour cream) with natural sweetness from honey, silky raw sheep's milk cheese that dissolves on the tongue, fresh dairy products sourced from their own cows, authentic Afghan cheeses with walnuts and raisins, mantu dumplings with flavorful masala and pickled chilies, ash porridge with yogurt sauce and fermented chili, liver and tripe dishes with garlic cooked on hot griddles, warm hospitality and family-run atmosphere
What could improve: Nothing mentioned
The Dishes
The tour began at an ancient 50-year-old Afghan breakfast establishment known for exceptional dairy products. The farm-fresh eggs were cooked multiple ways in oil, creating fluffy, pillowy textures with natural golden yolks. Served alongside were vibrant green chili sauce and Afghan pickles that provided perfect briny acidity. The kimak, a thick sour cream, came in two versions: chilled and warm, topped generously with local wildflower honey and Afghan walnuts with raisins. The raw sheep's milk cheese had a silky, gelatinous texture that liquefied on the tongue, while the cooked cow's milk cheese offered a crumbly consistency. A unique power beverage featured egg yolk mixed with turmeric, honey, and hot fresh milk, creating a soothing, protein-rich drink believed to strengthen vitality.
At the market food stalls, mantu dumplings arrived steaming with thin wrappers filled with minced beef. They were served with a red bean sauce, dollop of sour cream, and a sprinkle of aromatic masala. The ash was a hearty noodle porridge made with yogurt sauce, fermented chili chutney, garbanzo beans, and red beans, served with a traditional ladle-spoon and topped with dried mint and cilantro. Near the bird market entrance, a griddle stall offered liver and tripe sautéed with tomatoes, upgraded with raw flash-fried garlic that remained vibrant and pungent.
The Experience
The first establishment was family-run by brothers, incredibly welcoming and refusing payment out of hospitality. The atmosphere was warm and intimate, with the hosts guiding the experience through each dish. The market food stalls operated at a frenetic pace with bench seating, designed for quick meals as people hurried through Kabul's busy bazaar. Diners could finish a complete meal in just two minutes. The 100-year-old building housing the liver stall featured an ancient staircase leading to hidden upstairs rooms, preserved through six earthquakes. The vendors were exceptionally friendly, inviting the reviewer to sit and share tea.
Value and Pricing
While specific prices were not detailed for most dishes, the meals represented excellent value for money given portion sizes and quality. A turquoise ring purchased during the market visit cost 30 dollars. The street food stalls offered incredibly affordable prices given the freshness and authenticity of ingredients.
