Gwen — Review by Eating With Tod
M, United Kingdom — Modern fine dining with Japanese, Mexican, and British influences
Gwen is a hidden gem eight-seat restaurant in Wales run by two Michelin star chef Gareth Ward and Peter Sanchez, accessible only by ringing a doorbell. The 18+ course taster menu takes diners on an incredible culinary journey featuring premium ingredients like blue fin tuna, lobster, and A5 Wagyu, with flavors spanning Japanese, Mexican, and British influences. At £216 per person, it offers exceptional value compared to sister restaurant Yiannis at £450.
What was great: Every single course was exceptional with no bad bites; standout dishes included aged blue fin tuna with caviar, fire roasted lobster tails with bone marrow, A5 Japanese Wagyu chili confit with toasted sourdough, and the creative journey from Japanese to Mexican to British influences; exceptional value at £216 for 18+ courses
What could improve: Nothing mentioned
The Dishes
The meal begins with an extraordinary parade of starters, including Jambon Iberico Gilda paired with aged blue fin tuna from the Himalayan salt room. The standout opening bite was akami blue fin tuna with soy dashi jelly and N25 Kuga hybrid caviar, described as simply woof worthy. Moving into the main courses, diners encounter a fire roasted prawn from San Sebastian served with lobster bisque that tastes like poetry. More blue fin tuna arrives finished with ponzu, so delicious the reviewer had to lick the bowl clean.
The kitchen continues its creative journey with fire roasted lobster tails accompanied by bone marrow, followed by pork ribs with sweet and sour al pastor sauce showing Mexican influence. A fire roasted quail with date and sesame mole brings the flavors back to earth beautifully. The showstopper arrives in the form of A5 Japanese Wagyu prepared two ways - first simply on its own like butter, then as an innovative A5 Wagyu chili confit served with toasted sourdough. Three different desserts conclude the experience, each as thoughtfully crafted as the savory courses.
The Experience
Gwen is incredibly intimate, seating only eight guests in a space just three meters wide. The restaurant has no visible signage on the outside; entry requires ringing a doorbell like entering an exclusive speakeasy. The experience unfolds across two rooms, with service that guides diners through a carefully orchestrated journey. Chef Peter Sanchez personally orchestrates this culinary adventure, taking guests from one cuisine influence to another seamlessly, ultimately bringing everything home to British sensibilities.
Value and Pricing
At £216 per person for 18+ courses, Gwen represents incredible value in fine dining. This price point is less than half the cost of sister restaurant Yiannis, which charges over £450 for a similar experience. The quality of ingredients - from aged blue fin tuna to A5 Japanese Wagyu to fresh San Sebastian prawns - would justify premium pricing at any establishment.
Notable Moments
You'll then take it on a journey with five other starters from Strachella and Pankon tomato through to my favorite bite, akami blue fin tuna, soy dashy jelly, N25 Kuga hybrid caviar. One word, woof.
Step aside, Grandma. Wagu has entered the room.
You could put any of those dishes on your menu and they will go path for par.
The Verdict
Gwen deserves its reputation as a hidden gem and one of the UK's best restaurants. Every single course demonstrates technical excellence and creative vision, with no weak links in the entire tasting menu. The restaurant is perfect for adventurous diners seeking an unforgettable culinary experience that combines luxury ingredients with innovative flavor combinations at surprisingly accessible pricing. This is destination dining that punches well above its weight and delivers an evening you will never forget.
