What could improve: Nothing mentioned

The Dishes

The butcher's feast served as the centerpiece of the meal, featuring three distinct premium cuts of beef: hanger steak, 45-day dry age ribeye, and American Wagyu flat iron steak. Each cut was meticulously cooked to medium-rare perfection by the attentive staff, with visible juice pooling on the plate indicating exceptional quality. The hanger steak arrived tender and juicy, while the ribeye showcased deep umami flavors from its extended dry-aging process. The flat iron proved to be the standout cut, offering superior juiciness, perfect crust, and a balanced fat content that proved more memorable than even the ribeye.

Beyond the steaks, the meal began with a prime beef bone consomme infused with black truffle, providing an elegant warmth and umami foundation. The appetizers included lobster escargot in semi-meuniere sauce with a heat that built gradually, and oyster dynamite with gochujang, fish roe, and chives that paired beautifully together. A remarkable Caesar salad featured parmesan crisps instead of traditional croutons, creating an intensely flavored side dish with pronounced anchovy notes and a surprising spicy kick.

The banchan assortment proved exceptional, featuring grilled button mushrooms so tender they seemed to dissolve, pickled vegetables including cauliflower and okra, two types of lettuce, and fermented soybean paste. The steamed egg arrived with a beautiful seared top and perfect seasoning. Two stews accompanied the meal: a kimchi jjigae loaded with kimchi and pork belly with intensely concentrated flavors, and a milder soybean stew with tofu and vegetables. Spicy cold noodles with a stretchy, chewy texture provided the perfect palate interlude between meat courses. The meal concluded with vanilla soft serve drizzled with soy sauce caramel.

The Experience

The restaurant's atmosphere evokes an upscale nightclub vibe with sophisticated ambiance befitting its Michelin star status. The tableside cooking experience is integral to the dining journey, with knowledgeable staff guiding diners through each course and preparing the sums (Korean lettuce wraps) with practiced precision. The service demonstrates deep expertise, explaining preparations such as the thousand-day-aged Korean sea salt used for seasoning and demonstrating proper techniques for consuming each dish. The presentation of dishes is consistently beautiful and thoughtfully plated, creating visual interest alongside culinary excellence.

Value & Pricing

The butcher's feast was priced at 88 dollars per person, significantly less expensive than alternative offerings such as the 225-dollar steak makas featuring USDA prime and A5 Wagyu. This represents excellent value considering the quality and quantity of the meal, which includes premium beef, multiple preparations, extensive banchan, stews, rice, and cold noodles. The wine program offers options from 80-dollar bottles up to 7,000-dollar bottles for larger groups, accommodating various budgets.

Notable Moments

The flat iron steak might be my favorite cut of steak. I thought ribeye had to be the pinnacle of this meat experience, but I think it might be this.
Every single bite is pretty much like biting into a beefy waterfall.

A particularly memorable element was observing how the restaurant handles the rich galbi (short rib) cut by providing cold noodles specifically to balance the meat's richness. This understanding of flavor balance and diner experience demonstrates the restaurant's sophisticated approach to Korean barbecue service.
