The Dishes

The star of Redbird is the beef koobideh sausage, a unique creation that blends Texas barbecue traditions with authentic Persian flavors. The sausage is meticulously crafted using a traditional Iranian preparation method, featuring premium beef that is ground to perfection and infused with saffron steeped over ice to maximize flavor extraction. The blend includes a carefully selected mix of Persian herbs and spices, creating a complex and aromatic profile. The sausage is gently cased by hand to maintain its delicate texture and structure. Served alongside the sausage is homemade pita bread made fresh daily by the owner's father, who has been preparing it since the restaurant opened. The pita serves as the perfect complement, described as the cherry on top that elevates the entire dish and brings all the flavors together harmoniously.

The Experience

The restaurant showcases a personal touch throughout, with the owner's family involved in preparation. The atmosphere reflects a commitment to authenticity and quality, with everything prepared from scratch in-house. The operation demonstrates pride in both the Persian heritage and the Texas barbecue craft.

Notable Moments

I am the only Persian guy doing Texas style barbecue, I believe. And I'm the only one that's doing a Koobideh style sausage.
There's a lot of technicalities that go in a sausage. It's not just putting some meat in there and putting some stuff in there and then crossing your fingers. You know, there's a lot of science behind it.
For me, I think the pita bread was kind of the cherry on top for the koobideh sausage. It just makes sense and it just brings the dish.

The Verdict

Redbird represents an exciting culinary innovation in the Texas barbecue scene. The beef koobideh sausage is described as a must-item for anyone visiting, offering a genuine fusion of Persian culinary traditions with Texas barbecue expertise. This restaurant is best for adventurous diners seeking authentic, house-made cuisine and those interested in exploring innovative food crossovers.
