Saigon Alley is a Vietnamese all-you-can-eat Wagyu hot pot buffet in Las Vegas that delivers premium quality ingredients and exceptional value. The Dishes

The restaurant operates on a course-based system where you order items on an iPad, and after ordering 10 dishes, it resets for 5 minutes. The premium Wagyu course came packed with exceptional cuts including beef belly, Australian shoulder, pork belly, wet-aged Wagyu flat iron, Wagyu chuck, and Wagyu brisket. Each piece was beautifully marbled and cooked quickly in the communal broth, melting on the tongue without requiring much chewing. The seafood course featured a personal lobster tail with sea snails, scallops, and crawfish, all impressively fresh and tender. Premium beef skewers tasted like A5 Wagyu with incredible depth of flavor.

The appetizers and cooked dishes were equally impressive. Beef carpaccio, grilled squid, mushroom wrap skewers, Cajun seafood, crispy potatoes, and a premium beef skewer arrived as starters. The mochi pouches, which the reviewer initially thought contained mochi, actually held succulent shrimp and proved to be a surprising delight. Grilled eggplant was dressed with scallions, peanuts, and garlic, while the pig ear salad provided a nice textural contrast to balance the richness of the meat courses.
