Victor Churchill — Review by Jack's Dining Room
Melbourne, Australia — Steakhouse
Victor Churchill is Australia's oldest family-run butcher shop and steakhouse since 1876, offering an exceptional dining experience where customers select from dry-aged meat before it's carved tableside and cooked over dual wood-fired grills. Every cut tasted phenomenal with incredible juiciness and flavor, making it one of the best steakhouses the reviewer has visited.
What was great: Exceptional quality steaks with incredible tenderness and flavor, phenomenal boned ribeye, tender lamb with excellent fat cap, juicy eye of the ribeye with perfect char and seasoning, unique experience of selecting meat from dry aging rooms and watching carving at the table
What could improve: Nothing mentioned
The Dishes
The boned ribeye arrived looking absolutely insane and tasted phenomenal. The meat was incredibly juicy with the fat on the outside providing almost the best flavor of the entire cut. Next came Australian lamb, renowned worldwide for its quality, featuring an impressive fat cap that was so tender it cut like butter with just teeth pressure. The lamb was some of the most tender the reviewer had ever experienced, with the fat being highlighted as the standout component. The eye of the ribeye, supposedly one of the most tender cuts available, practically exploded with juice upon biting. The edge piece with extra seasoning and char provided the most memorable bite, delivering an extraordinary eating experience.
The Experience
The atmosphere is unique and memorable with two separate dry aging rooms immediately visible upon entry. The service experience centers around customers telling the butchers exactly what they want, then watching as the meat is carved right next to their table. The carved cuts are then taken to the back to be cooked over dual wood-fired grills, creating theater and engagement throughout the meal.
